Abstract

If we desire to save time and effort in the lab or on the computer, modeling the sorption water isotherm of food is a necessary. This perspective introduces a state-of-the-art model connected to actual gas to analyze and explain the water sorption isotherm on meat dates. Microscopic process description and interpretation are made possible by fitting the adsorption/desorption isotherms to the statistical model. Based on the parameters of the model, a steric interpretation was produced. The exothermic nature of the adsorption process may be inferred from an energy interpretation.

The statistical model was used to determine entropy, internal energy, and Gibbs free energy, the three thermodynamic potentials that  control the adsorption process. Porosity and adsorption energy distributions (PSD and AED, respectively) of flesh dates round out the investigation.
